The box beef cutout rally has topped out and softened a little which is normal after the Memorial Day buying period is over. Fortunately, Father's Day is coming up and it is a big holiday for Choice steaks as well. The Choice rib primal has held up in price but the round, chuck and loin have topped out and started to decline some. However the Choice-Select spread set another new record which indicates continued good demand for Choice middle meats.
