Meat Market Update | Middle meat steaks increase cutout

The weekly average Choice cutout was $1.16 higher even though the daily cutout ended the week lower. The formula prices, which were over 52 percent of the total volume, supported the increase because many formulas, but not all, are based off of the previous week's spot or negotiated cutout which was over $2 higher. Also the out-front prices for middle meat steak items were higher again which also helped to increase the cutout.
