Meat Market Update | Rib and loin primal continue grilling climb

Ed Czerwien, market analyst based in Amarillo, Texas, offers a concise summary of how last week's beef trade impacted the cattle market and beef prices.

The weekly average Choice cutout, which includes all types of sales including the daily spot cutout, ended the week $219.88, $3.88 higher and again pushed up by the higher rib and loin prices. In fact, the weekly average Choice loin primal was $13 higher and the weekly avg Choice Rib primal was $5 higher which is continuing to rally higher and earlier than last year. The daily Choice Rib primal was $366 on Friday; that compares to $327 last year, helping to push the weekly average prices higher. These two primals which represent choice steak items for grilling are definitely the major driving force in the cutout rally this time of the year.
