Meat Market Update | Round and chuck prices up, offsets drooping Choice ribs

The big items in last week's wholesale beef market were the improving rally in the round and chuck primal, which offset the declining Choice rib primal. The daily Choice round has rallied about $30 in the past few weeks which is higher than normal for this time of the year. It doesn't normally rally this much until after the first of the year, which has pushed the cutout quite a bit higher.
