Well, if you read my post yesterday, then you heard that I'm going to try a new recipe from the Healthy Beef Cookbook every week until completion. This week, I'm preparing Cowboy Beef and Black Bean Chili, a delicious and nutritious new take on the old classic. I woke up and got the chili stewing this morning for an early supper with my roommates and friends that are returning to Brookings, S.D. for the start of school today.
Speaking of school--it's back to classes for this girl, and I'm ready to start learning once again. To finish up my degree in three years, I have had to take an interesting mix of courses to meet the requirements of an ag journalism degree, and my last semester of classes is no different. My schedule consists of Wildlife 220, Plant Science Soils, Journalism Seminar, Spanish 310, News Editing and Digital Media Production. I'm excited to start the semester but maybe a little scared about its completion, as well. My college experience is certainly a chapter in my life that I will never forget.
