Ed Czerwien, market analyst based in Amarillo, Texas, offers a concise summary of last week's beef cutout trade.
The daily spot Choice box beef cutout ended the week of Friday, December 6 at $224.56 which was $7.56 lower compared to previous Friday. It then continued to drop more and was $218.65 on Wednesday, Decemberr 11. However, it still continues well over last year when the same Friday in 2018 it was $214.29 which about was $1 higher that week. This week the daily Choice rib primal was $1 higher by Friday and the loin was $5 lower, but the daily Choice chuck and round were $7-12 lower forcing the cutout much lower.
As previously mentioned the weekly average Choice cutout always follows the daily cutout, but at a slower pace because the formula sales, which are always around half of the total sales, are often priced off of the previous weeks daily spot cutout prices.
