Meat Market Update | Rib, loin sales keep cutout from dropping

Ed Czerwien, USDA Market News reporter in Amarillo, Texas, provides us with the latest outlook on boxed beef prices and the weekly cattle trade.

The weekly average Choice cutout dropped 1.59, but Choice Rib and Loin steak sales continue to help keep the cutout from dropping lower. The Choice Select spread ended the week to over 24 dollars last Friday, which is double of last year and indicates good demand for steaks for grilling.

We are currently harvesting more steers and heifer than last year, which are grading about the same as last year at almost  74 percent Choice and Prime.
