Meat Market Update | Prime Rib orders keeps the cutout afloat

Ed Czerwien, market analyst based in Amarillo, Texas, offers a concise summary of how last week's beef trade impacted the cattle market and beef prices.

The daily Choice spot cutout ended the week $5 lower, but had been lower than that mid-week and rebounded on Friday when the daily Choice rib primal jumped $14 per cwt in one day, then improved even more on the following Monday and Tuesday. The late ordering of Prime Rib product kept the Choice cutout from declining more. This jump is typical as these last minute orders take place ahead of the Christmas party season. Ordering normally comes to an end sometime between December 5-8.
