Meat Market Update | Prime rib season ends, crockpot cooking keeps cutout afloat

Ed Czerwien, market analyst based in Amarillo, Texas, offers a concise summary of how last week's beef trade impacted the cattle market and beef prices.

The daily spot Choice box beef cutout ended the week last Friday at $210.96 which was $3.33 lower compared to previous Friday. The daily Choice rib primal dropped $30 per cwt as purchasing of prime rib for Christmas parties is over. As a result, the daily Choice loin primal ended the week $6 lower. The daily Choice round and chuck primals were higher for the week as home cooks start to use more roasts this time of the year.Those two primal increases really helped to keep the cutout from dropping even more.
