Meat Market Update | Rib primal rallies wholesale market

Ed Czerwien, market analyst based in Amarillo, Texas, offers a concise summary of how last week's beef trade impacted the cattle market and beef prices.

The weekly average Choice cutout, which includes all types of sales including the daily spot cutout, was 195.02 which was $1.64 higher and no doubt helped by the daily spot choice rib primal which jumped $57 per cwt in a little over three weeks. That recent rally with the Choice rib primal has pushed the weekly average Choice Cutout higher than last year.
