Meat Market Update | Strong demand for roasts, home cooking boosts cutout

The roast demand this time of the year for Round and Chuck items proceeds with the normal seasonal rally pushing the cutout higher again this week. The weekly average for the Choice Round and Chuck primals were $3-$6 higher which drives this rally big time, because together they represent over 50 percent of the carcass.
