From Leann Martin

  • 1 pound beef
  • 1/3 cup dry breadcrumbs
  • 1/4 cup minced yellow or white onion
  • 1 large egg
  • 1 finely chopped garlic clove
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly ground black pepper
  • 1 Jar of Pasta Sauce
  • 1/2 box of pasta
  • Olive Oil for frying
  • Flour
  • Sauteed Zucchini (optional)

Preheat oven to 400 degree F. Combine all ingredients, except the tomato sauce, flour and pasta in a large bowl and mix until just combined. Moisten hands, and gently form mixture into 1-inch meatballs (you should have about 25) and place on a baking sheet. Take balls and roll in flour - this helps them set up and will give them a crispy outside. Chill for ten minutes before browning in oil. Brown meatballs. Transfer to greased cookie sheet and bake in the oven for 15 minutes - until done. Toss with pasta, zucchini and sauce. Let simmer together for ten minutes - serve hot with Parmesan cheese and/or shredded Italian cheese as desired.
