Meat Market Update | Choice cutout follows seasonal trends, drops $2.66

Primal prices declines $2-5, bringing down the overall cutout, following a seasonal trend.

The weekly average Choice cutout, which includes all types of sales including the daily Choice cutout, was $211.64 which was $2.66 lower. The annual comparison graph shows just how close to 2015 it is right now, following the seasonal decline but still just a little higher than last year yet.  It was pushed lower by declining primal prices. 

The weekly average Choice rib primal was $5 lower after topping out last week which is unusual this time of the year. However this year’s rally started a lot earlier which helped to push the rib primal price higher than any year except 2014.  

The weekly average Choice chuck, round, and loin primals were all $2-5 lower following the daily primal sales that continue to drop in price. These three primals represent over 73% of the total carcass so they have a big impact on total price.
